Beef stew

1 serving = 376 calories

  • 1 P chuck cut in cubes
  • 1 tablespoon salt and pepper
  • 2 quarts water
  • 4 carrots cut up
  • 8 chopped onions
  • 2 stalks celery, cut in 2-inch pieces
  • 2 cans sauerkraut

Sprinkle meat with salt and pepper, and brown in melted fat over high heat.

Reduce heat to very low, add water, cover and cook 1½ hours.

Add carrots, onions, celery and sauerkraut and cook another ½-¾ of an hour, or until vegetables are tender.

Serves 4.

 

Beef kidney stew

1 serving = 115 calories

Cut kidney in half, and remove core and membrane.

Soak in cold water 1 hour.

Drain and cut into small pieces.

Combine with parsley, onions and salt.

Cover with boiling water.

Cover and simmer for 3 hours; add more water if necessary.

Thicken with a roux made from 1 tablespoon butter and 1 tablespoon flour if you want to (however this will add 26 calories per serving).

Serves 4.
